The pair shared their history, “Juan is Peruvian-Chinese and Kim is Laotian, which is how we created our fusion concept. We wanted to pay homage to both our cultural background through flavors we both grew up eating from Mamita’s cooking, Juan’s grandmother and for Kim, from her mother’s cooking. The flavor combination of Peruvian and Lao surprisingly married very well together. You will be able to taste the spices, herbs, heat from the chilis in some of the dishes, most importantly you will taste Peruvian and Lao flavors on the dishes we create.”


Food and drink items that are highly restricted or banned in the US

Khao and Papas started as a food tent vendor in 2022 and quickly transitioned into a food truck a year later in 2023. Within that time and now, Khao and Papas has expanded swiftly, they have now been successfully operating their food truck for about a year now.

A few of their iconic menu items include: Anticuchos Skewers, Sticky Rice Plate, Steak Fries, Steak Nachos, Shrimp Tallerin Saltado, Lomo Saltado, Pesto Pasta with Lemongrass Short-ribs and Lemongrass Fried Chicken.
