For farangs who don’t know what a Kuay chap is it is some Chinese noodle soup that Kway Teow stalls in Thailand sells. It is one of my favorite soups in Thailand. However there is some rare variant of the soup called Kuay Chap Yuan. Wikipedia describes it as a “ญวน” (Yuan) might be a regional term or a variation not widely recognized.

But however local Thais say it is from Vietnam and I believe this theory because ญวน is a term referring to Vietnamese (similar to Farang). However I search and a lot of them is in Ubon Ratchathani with some claiming it originates from there. I never saw a dish like this in Vietnam or anything (the broth is similar to Pho but the dish itself is not), So does anyone know if there is a dish in Vietnam that is similar or is the origin of this dish? Thanks
