A Vermont-based restaurant that works with local farmers and producers is opening its first location in Massachusetts.

HADLEY, Mass. (WWLP) – A Vermont-based restaurant that works with local farmers and producers is opening its first location in Massachusetts.

The Skinny Pancake will open its eighth location in a newly constructed 3,000-square-foot building on Route 9 in Hadley. The chain offers casual dining in what they call, “a signature four-meal-a-day approach—breakfast, lunch, dinner, and dessert.”

“We’ve had our sights on the Pioneer Valley for a while now,” says Founder Benjy Adler. “It’s an area with a vibrant local food culture and a strong sense of community—both of which align with our values. We’re excited to contribute to the energy and spirit of the region while expanding our presence in southern New England.”

The menu features sweet or savory crepes, panini sandwiches, burgers, fresh salads, and more made with local, organic, and healthy ingredients. Customers can also stop in to enjoy a full espresso bar, milkshakes, craft beer, wine, and brunch cocktails.

The Skinny Pancake was founded in 2003 as a vendor cart in Burlington, Vermont. They aim to source over 50% of their ingredients from the surrounding region to provide a locally-owned alternative to the area’s dining options. 

“We’re eager to serve a wide range of guests, whether they’re students grabbing brunch, families stopping mid-shopping trip, or anyone looking for a place to unwind with a good meal,” said Adler.

You may have already heard of them, dubbed “Skinny P,” which has served the western Mass. community at The Big E in West Springfield and the Green River Festival in Greenfield. Skinny P even ran out of batter so quickly that they sourced a local wholesaler for more ingredients.

“Anyone in food service knows that making 25 gallons of anything on the fly (especially at a music festival… in a field…under a tent) is no easy feat. Did we mention we cracked those eggs by hand? The Hadley location, set to open in November, joins six Vermont locations and one in Albany, New York.
